Spiced Baked Apples

Spiced Baked Apples with rice pudding and homemade golden ghee.

I often make baked apples for a new mama during our very first postpartum appointment. They’re soothing on her digestion and very comforting to eat. They smell delicious when they’re baking and are easy enough for me to make in an unfamiliar kitchen.

I usually serve with Spiced Rice Pudding for an easy to digest and very comforting any time of the day snack. One mum I cared for would have baked apples with rice pudding for breakfast every morning!

** My kids LOVE these spiced baked apples with yoghurt or cream for desert.


Ingredients

  • 1 kg of apples peeled, cored, quartered. 

  • 2 cinnamon quills and a sprinkle of ground cinnamon too. 

  • ½ teaspoon nutmeg. 

  • 6 whole cloves.

  • 6 whole cardamom pods.

  • ¼ cup Butter/ghee/coconut oil

  • ¼ cup maple syrup OR honey. 

  • ¼ cup water 

  • A baking dish with a lid, or some tin foil to cover.


Warm the oven to 200 degrees C.

Chop the apples into quarters, remove the core, peel the apple pieces and pop the apple chunks into a baking dish.

Add the cinnamon quills and a sprinkle of cinnamon, the nutmeg, cloves, and cardamom pods.

Dollop on the ghee/butter/coconut oil.

Drizzle on the maple syrup/honey and pour in the water.

Mix it all up a bit.

Then cover with a lid or tin foil and put in the oven.

Bake at 200 degrees Celsius for about an hour, check them if/when you start to smell them.

They should be golden in colour, soft and delicious with a thick sweet syrup!

If the apples look whitish and the syrup looks quite clear and watery still, pop them back in for another 15 mins or so.

Remove the cloves, cardamom pods and cinnamon quills before serving.

I serve these on spiced rice pudding with a dollop of homemade ghee and a sprinkle of rapadura and cinnamon.

Store in the fridge up to about five days.
