Cacao & Cashew fudge with figs and dates.

This is honestly delicious. And helpful for your digestion with all those figs and dates. My kids think this is the best chocolate brownie I’ve ever made. Not that this is chocolate brownie, but it’s kind of similar. Rich, chocolatey, almost gooey but without the sugar crash after.

Cacao & Cashew fudge with figs and dates

Ingredients

  • 90g raw cacao nibs, 

  • 230g raw unsalted cashew nuts,

  • 150g dried dates, 

  • 100g dried figs

  • 1 tbsp vanilla extract

  • 1/4 tsp sea salt

  • 1 tbsp maca powder

  • 2 tbsp mesquite powder

  • 1 teaspoon ground cinnamon 

  • 1 teaspoon ground cardamom


In a strong, high powered food processor -

  1. Blitz the cacao nibs until ground to a fine powder. 

  2. Add the cashews and blitz. 

  3. Add all the dates and blitz.

  4. Add the figs and blitz.

  5. Add the other ingredients and blitz until combined and sticky. 

  6. You can bung it all in together, but I find adding one ingredient at a time makes the blitzing time shorter and easier.

  7. Tip the mixture out onto a large sheet of baking paper. Fold the paper over the top of the mixture so your hands are pressing on paper not the sticky mixture and press into a rectangular shape about 1.5 cm thick. 

  8. Slice into little squares around 2 or 3 cm in size. It’s quite rich so I find small works well.

  9. Store in an airtight container in the fridge.
