New Mama Chai

New Mama Chai

A favourite with the mums I cared for. Often requested multiple times. This chai has been known to convert non chai drinkers into committed chai lovers! Add more ginger for a more spicy chai and less if you prefer it less spicy. I usually make this for mums the very first time I visit them.


Ingredients

  • Large chunk of ginger - about a 4 - 5 inch chunk or if using dried ground ginger, I use about 1.5 teaspoons.

  • 24 cardamom pods.

  • 2 teaspoons fennel seeds

  • 2 Cinnamon sticks

  • 1 flat teaspoon nutmeg 

  • 6-8 teaspoons of rooibos tea or 6-8 teabags. It depends on how strong the tea is.

  • 4 cups water

  • 4 cups of your preferred milk, cows, oat, almond. If you're using non-dairy milk, be really careful not to let the milk split, or make sure you use a brand that is made for hot drinks.

  • Large jar/s to store it in.


METHOD:

Wash and then chop the ginger into small chunks. Pop the ginger and all the spices, rooibos tea, and four cups of water into the pot and bring to the boil. 

Turn off heat and let steep for about 10-20 mins. (Or longer if you prefer stronger spice flavour). 

Add the four cups of milk and bring back to the boil - be careful it doesn't boil over! 

Once you see steam rising from the milk, or small bubbles around the edge, turn off the heat.

Add rapadura or coconut sugar or honey to taste. 

Strain and serve warm. I strain through a big strainer into another big pot.

Store in a jar in the fridge for up to five days.

This makes about 8 cups of chai!
